Preparation
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a mixing bowl, whisk together the flour, baking soda, baking powder, and salt. Set aside.
Mixing
- In a large bowl, cream the softened butter and granulated sugar together until light and fluffy, about 2-3 minutes.
- Beat in the egg, lemon zest, lemon juice, and vanilla extract until well combined.
Combining Ingredients
- Gradually add the dry ingredient mixture to the wet ingredients, mixing until just combined.
- Scoop dough onto the prepared baking sheet, spacing them about 2 inches apart. Flatten them slightly.
Baking
- Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden.
- Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Notes
Store cookies in an airtight container at room temperature for up to a week. You can also freeze the cookies for up to three months.
