  • 1/2 cup powdered sugar
  • 1 tablespoon lemon zest
  • 2 tablespoons lemon juice
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt

Preparation
  1. Gather all your ingredients and preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large mixing bowl, beat the softened butter and powdered sugar together until fluffy and pale.
  3. Mix in the lemon zest and lemon juice.
  4. In a separate bowl, whisk together the flour and salt. Gradually add this mixture to your butter mixture, mixing until well combined.
  5. Cover the dough with plastic wrap and chill in the refrigerator for at least one hour.
  6. Once chilled, scoop tablespoon-sized amounts of dough and roll them into balls. Place them on your prepared baking sheet.
  7. Bake for about 12-15 minutes or until the edges are set but the centers are still soft.
  8. Allow them to cool slightly before dusting with extra powdered sugar.
  9. Serve warm or at room temperature.

Notes

For best results, chill the dough properly and measure flour accurately. Store in an airtight container at room temperature for up to one week or freeze for up to three months.
