Ingredients
  

For the crust
  • 1 cup all-purpose flour
  • 1/4 cup powdered sugar
  • 1/2 cup unsalted butter, melted
For the filling
  • 8 oz cream cheese, softened Make sure it's at room temperature.
  • 1 cup granulated sugar Adjust for sweetness preference.
  • 2 large eggs
  • 2 tablespoons all-purpose flour
  • 2 tablespoons fresh lemon juice
  • Zest of 1 lemon For added lemon flavor.

Preparation
  1. Preheat your oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper, leaving some overhang for easy removal.
Make the crust
  1. In a medium bowl, combine the flour and powdered sugar. Drizzle in the melted butter and mix until crumbly.
  2. Press the mixture evenly into the bottom of the prepared pan. Bake for 15 minutes or until lightly golden.
Prepare the filling
  1. In a mixing bowl, beat the softened cream cheese and granulated sugar until smooth.
  2. Add the eggs one at a time, mixing well after each addition. Stir in the flour, fresh lemon juice, and lemon zest until combined.
Bake the filling
  1. Pour the cream cheese mixture over the pre-baked crust, spreading it evenly.
  2. Bake for an additional 20-25 minutes, or until the filling is set and the edges are slightly golden.
Cool and serve
  1. Allow the bars to cool in the pan. Once cool, refrigerate for at least 2 hours before slicing into squares.
  2. Dust with powdered sugar if desired before serving.

For the creamiest texture, ensure cream cheese is at room temperature before mixing. Adjust sweetness for tanginess, and consider adding more zest for extra citrus flavor.
