Preparation
- Preheat your oven to 350°F (175°C) and grease a baking dish (8x8 inches works great).
- In a mixing bowl, whisk together the fresh lemon juice, lemon zest, and sugar until well combined.
- Stir in the melted butter and milk, mixing until smooth.
- In another bowl, sift together the flour, baking powder, and salt. Gradually fold this dry mixture into the wet ingredients until just combined.
- Pour the batter into your greased baking dish, spreading it evenly.
Baking
- Bake for 30-35 minutes, or until the top is golden brown and the cobbler is bubbly.
- Once baked, allow it to cool slightly before serving warm. A sprinkle of powdered sugar on top couldn’t hurt either!
Notes
Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream. Store leftovers in the refrigerator for up to 3 days.
