Ingredients
  

For the filling
  • 1 cup fresh lemon juice (about 4-5 lemons) Use fresh lemons for the best flavor.
  • 1 tablespoon lemon zest Freshly grated for optimal taste.
  • 1 cup granulated sugar
  • 1 1/2 cups milk
  • 1 teaspoon baking powder
  • A pinch salt Helps balance the sweetness.
For the topping
  • 1/2 cup all-purpose flour
  • 1/4 cup unsalted butter, melted Should be melted before adding.
Optional
  • to taste powdered sugar for dusting For added sweetness and decoration.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a baking dish (8x8 inches works great).
  2. In a mixing bowl, whisk together the fresh lemon juice, lemon zest, and sugar until well combined.
  3. Stir in the melted butter and milk, mixing until smooth.
  4. In another bowl, sift together the flour, baking powder, and salt. Gradually fold this dry mixture into the wet ingredients until just combined.
  5. Pour the batter into your greased baking dish, spreading it evenly.
Baking
  1. Bake for 30-35 minutes, or until the top is golden brown and the cobbler is bubbly.
  2. Once baked, allow it to cool slightly before serving warm. A sprinkle of powdered sugar on top couldn’t hurt either!

Notes

Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream. Store leftovers in the refrigerator for up to 3 days.
