Prepare the Oven:
Preheat your oven to 375°F (190°C).
Line a baking sheet with parchment paper or lightly grease it with nonstick spray.
Make the Cheesecake Filling:
In a mixing bowl, combine the softened cream cheese, granulated sugar, vanilla extract, lemon zest, and fresh lemon juice.
Beat with a hand mixer or whisk until smooth and creamy.
Assemble the Crescent Rolls:
Unroll the crescent dough and separate it into 8 triangles.
Place a spoonful of the cheesecake filling at the wider end of each triangle.
Roll up the dough starting at the wide end, tucking in the filling as you go. Place each roll on the prepared baking sheet.
Bake:
Bake the crescent rolls in the preheated oven for 10–12 minutes or until golden brown.
Optional Glaze:
In a small bowl, mix the powdered sugar and milk until smooth. Drizzle the glaze over the warm crescent rolls.
Serve:
Let the rolls cool slightly before serving. Enjoy them warm or at room temperature!
