  2. In a mixing bowl, combine the leftover mashed potatoes, shredded cheese, breadcrumbs, flour, and the beaten egg. Season with salt, pepper, and any optional herbs or green onions.
  3. Mix well until everything is combined into a uniform mixture.
  4. Using your hands, scoop out small portions—about the size of a golf ball—and shape into puffs or balls.
  5. Place the puffs on the prepared baking sheet, ensuring they are spaced apart.
  6. Bake for 20-25 minutes, or until the puffs are golden brown and crispy on the outside.
  7. Serve warm, and watch them disappear!
