Ingredients

  • 1 small head small head of cabbage, finely shredded (about 6 cups)
  • 2 medium medium carrots, shredded
  • 1/4 cup onion, finely chopped
Dressing
  • 1/2 cup mayonnaise
  • 1/4 cup buttermilk
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons granulated sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Method
 

Preparation
  1. Finely shred the cabbage and carrots using a sharp knife or a food processor. Include the chopped onion for added flavor.
  2. In a large mixing bowl, combine the shredded cabbage, carrots, and onions. Toss them lightly so they’re evenly mixed.
  3. In another bowl, whisk together the mayonnaise, buttermilk, apple cider vinegar, granulated sugar, salt, and pepper until smooth.
  4. Pour the dressing over the cabbage mixture and gently toss until all the veggies are well-coated.
  5. Cover the bowl and refrigerate the coleslaw for at least one hour to allow the flavors to meld together.
  6. After chilling, give it a final toss and serve as the perfect side dish or stand-alone salad.

Notes

For the best flavor, choose fresh ingredients and don't skip the chilling step! You can also experiment with add-ins like apples or nuts for different textures.
