Ingredients
  

For the Meatballs
  • 1 lb ground beef (or ground chicken, if preferred)
  • 1/2 cup almond flour
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 2 cloves garlic, minced
  • 1 tsp onion powder
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
For the Sauce
  • 1 cup unsweetened tomato sauce
  • 1/2 cup heavy cream
  • 1 cup shredded mozzarella cheese (for topping)
  • Fresh basil or parsley for garnish (optional)

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine ground beef, almond flour, Parmesan cheese, egg, minced garlic, onion powder, Italian seasoning, salt, and pepper. Mix until just combined.
  3. Using your hands or a cookie scoop, form the mixture into meatballs, about 1 inch in diameter. Place them on a baking sheet lined with parchment paper.
Baking
  1. Bake the meatballs in the preheated oven for about 20 minutes or until they are browned and cooked through.
  2. While the meatballs are baking, in a medium saucepan over medium heat, combine the unsweetened tomato sauce and heavy cream. Stir and let it simmer for about 5 minutes.
  3. Once the meatballs are ready, remove them from the oven and place them in a casserole dish. Pour the creamy tomato sauce over the meatballs, and sprinkle with shredded mozzarella cheese.
  4. Return the casserole to the oven and bake for an additional 15 minutes, or until the cheese is melted and bubbly.
Serving
  1. Let the casserole cool for a few minutes. Top with fresh basil or parsley, if desired, and serve warm!

Notes

Feel free to swap ground beef for ground turkey or chicken. Try different cheeses for a unique flavor. You can add veggies like spinach into the meatball mixture for extra nutrition. This dish is great for meal prepping.
