Preparation
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine ground beef, almond flour, Parmesan cheese, egg, minced garlic, onion powder, Italian seasoning, salt, and pepper. Mix until just combined.
- Using your hands or a cookie scoop, form the mixture into meatballs, about 1 inch in diameter. Place them on a baking sheet lined with parchment paper.
Baking
- Bake the meatballs in the preheated oven for about 20 minutes or until they are browned and cooked through.
- While the meatballs are baking, in a medium saucepan over medium heat, combine the unsweetened tomato sauce and heavy cream. Stir and let it simmer for about 5 minutes.
- Once the meatballs are ready, remove them from the oven and place them in a casserole dish. Pour the creamy tomato sauce over the meatballs, and sprinkle with shredded mozzarella cheese.
- Return the casserole to the oven and bake for an additional 15 minutes, or until the cheese is melted and bubbly.
Serving
- Let the casserole cool for a few minutes. Top with fresh basil or parsley, if desired, and serve warm!

Feel free to swap ground beef for ground turkey or chicken. Try different cheeses for a unique flavor. You can add veggies like spinach into the meatball mixture for extra nutrition. This dish is great for meal prepping.
