  • 1 lb ground beef (or any ground meat of your choice)
  • 1/4 cup almond flour
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 large egg
  • 1 tsp Italian seasoning
  • Salt and pepper, to taste
For Cooking
  • 1/4 cup unsalted butter
  • Fresh parsley, chopped (for garnish)

Preparation
  1. In a mixing bowl, combine ground beef, almond flour, Parmesan cheese, minced garlic, egg, Italian seasoning, salt, and pepper. Mix everything until just combined; avoid overmixing!
  2. Using your hands, shape the mixture into meatballs, roughly 1 inch in diameter, and place them on a plate.
Cooking
  1. In a large skillet over medium heat, melt the butter. Once the butter is sizzling, add the meatballs and cook for about 8-10 minutes, browning on all sides.
  2. When meatballs are cooked through, reduce heat to low. Add minced garlic to the skillet and cook for another 2 minutes, ensuring the garlic is fragrant but not burnt.
  3. Remove from heat and garnish with fresh parsley. Serve immediately, either on their own or with a side of your favorite vegetable!

Notes

For ingredient substitutions, swap ground beef for turkey or chicken for a leaner choice or use nutritional yeast instead of Parmesan for a dairy-free alternative.
