  • 4 pieces boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon salt to taste
  • 1 teaspoon pepper to taste
  • 3 cups fresh spinach (or 1 cup frozen spinach, thawed)
  • 1 can artichoke hearts 14 oz, drained and chopped
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic minced
  • 1 teaspoon dried Italian herbs (or a mix)
  • 1 tablespoon fresh parsley for garnish

Method
 

Preparation
  1. Season both sides of the chicken breasts with salt and pepper.
  2. Heat the olive oil in a large skillet over medium heat.
  3. Once hot, add the chicken breasts and cook for about 6-7 minutes on each side, until golden brown and cooked through. Remove and set aside.
Making the Sauce
  1. In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant.
  2. Pour in the heavy cream, stirring well.
Incorporating Ingredients
  1. Stir in the spinach, artichokes, Italian herbs, and Parmesan cheese.
  2. Cook until the spinach has wilted and the sauce has thickened slightly, about 3-5 minutes.
Combining Everything
  1. Return the chicken breasts to the skillet, nestling them within the creamy sauce.
  2. Spoon some of the sauce over the top and cook for another 2 minutes until everything is heated through.
Garnishing and Serving
  1. Remove from heat and sprinkle fresh parsley over the top for a pop of color.
  2. Serve hot and enjoy the explosion of flavors!

Notes

For substitutions, consider using half-and-half instead of heavy cream to reduce calories. Fresh spinach can be replaced with frozen spinach if necessary. For a dairy-free option, use coconut milk and omit Parmesan cheese.
