Preparation
- Start by patting the chicken breasts dry with a paper towel. Season both sides with salt and pepper to taste.
Cooking Chicken
- In a large skillet over medium heat, melt 2 tablespoons of butter. Add the chicken breasts, cooking for about 6-7 minutes on each side or until golden and cooked through.
Sauté Garlic
- After removing the chicken, add the remaining 2 tablespoons of butter to the skillet. Once melted, add minced garlic and sauté for about 30 seconds until fragrant.
Cook Potatoes
- Toss in halved baby potatoes and pour lemon juice over them. Stir to coat and cook for about 10 minutes until they soften.
Combine and Finish
- Return the chicken to the skillet, nestling it with the potatoes. Let everything simmer together for an additional 2-3 minutes.
Serve
- Garnish with fresh parsley before serving. Enjoy!
Notes
Substitutions: Use turkey breast for a different flavor. For leftovers, store in an airtight container for up to 3 days, or freeze for up to 2 months.
