Ingredients
  

For the filling
  • 1 pound ground beef Use lean ground beef for less grease.
  • 1 tablespoon olive oil For sautéing.
  • 1 cup diced onions Brown it for more flavor.
  • 1 cup shredded cheddar cheese Use mild or sharp according to preference.
  • 1 cup cooked rice Can substitute with quinoa for a twist.
  • 1/2 cup diced tomatoes Fresh or canned.
  • 1/2 cup pickles, chopped For tanginess.
For assembly
  • 4 large flour tortillas Large tortillas hold more filling.
  • to taste Salt and pepper Season the beef mixture.

Method
 

Prepare the Beef Mixture
  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the diced onions and sauté for 3-4 minutes until they become translucent.
  3. Add the ground beef, seasoning with salt and pepper. Cook until the beef is browned, about 5-7 minutes. Drain any excess fat.
Combine the Fillings
  1. In a large bowl, combine the cooked beef and onion mixture with cooked rice, diced tomatoes, and chopped pickles. Mix together until well combined.
Assemble the Burritos
  1. On a flat surface, lay out a large flour tortilla. Spoon the beef and rice mixture onto the center of the tortilla.
  2. Sprinkle with shredded cheddar cheese.
  3. Fold in the sides of the tortilla and roll it up tightly from the bottom to create a burrito.
Cook the Burritos
  1. Wipe the skillet clean and place it back on the heat.
  2. Place the burritos seam side down in the skillet. Cook for about 2-3 minutes on each side, or until golden brown and crispy.
Serve
  1. Once the burritos are crispy, remove them from the skillet. Slice them in half if desired and serve with your favorite toppings.

Notes

For even more flavor, consider adding toppings like diced jalapeños or sautéed mushrooms to the beef mixture. Avoid overfilling the tortilla to prevent leaks during cooking. Store leftovers in an airtight container for up to 3 days in the fridge or freeze for up to 2 months.
