Prepare the Beef Mixture
- In a large skillet, heat the olive oil over medium heat.
- Add the diced onions and sauté for 3-4 minutes until they become translucent.
- Add the ground beef, seasoning with salt and pepper. Cook until the beef is browned, about 5-7 minutes. Drain any excess fat.
Combine the Fillings
- In a large bowl, combine the cooked beef and onion mixture with cooked rice, diced tomatoes, and chopped pickles. Mix together until well combined.
Assemble the Burritos
- On a flat surface, lay out a large flour tortilla. Spoon the beef and rice mixture onto the center of the tortilla.
- Sprinkle with shredded cheddar cheese.
- Fold in the sides of the tortilla and roll it up tightly from the bottom to create a burrito.
Cook the Burritos
- Wipe the skillet clean and place it back on the heat.
- Place the burritos seam side down in the skillet. Cook for about 2-3 minutes on each side, or until golden brown and crispy.
Serve
- Once the burritos are crispy, remove them from the skillet. Slice them in half if desired and serve with your favorite toppings.
