Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine peanut butter, sugar, egg, baking soda, and salt (if using). Mix until well-blended and smooth.
  3. Using a cookie scoop or tablespoon, drop rounded balls of dough onto parchment-lined baking sheets, leaving about 2 inches between each cookie.
  4. With a fork, gently press down each cookie to create a crisscross pattern.
Baking
  1. Bake in the preheated oven for 8–10 minutes or until golden brown.
  2. Remove cookies from the oven and let them cool on the tray for a few minutes before transferring to a wire rack.
