Preparation
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine peanut butter, sugar, egg, baking soda, and salt (if using). Mix until well-blended and smooth.
- Using a cookie scoop or tablespoon, drop rounded balls of dough onto parchment-lined baking sheets, leaving about 2 inches between each cookie.
- With a fork, gently press down each cookie to create a crisscross pattern.
Baking
- Bake in the preheated oven for 8–10 minutes or until golden brown.
- Remove cookies from the oven and let them cool on the tray for a few minutes before transferring to a wire rack.
Notes
These cookies pair wonderfully with milk and can also be served with ice cream or yogurt. For the freshest taste, store cookies in an airtight container with a slice of bread to keep them moist.
