Preparation
- In a medium mixing bowl, dissolve the Jello powder into 2 cups of boiling water, stirring vigorously until fully dissolved.
- Mix in 1 ½ cups of cold water to quickly cool the mixture.
- Pour the Jello mixture into egg molds or a cupcake tray, filling them to about ¾ full.
- Place the molds in the refrigerator and let them set for at least 4 hours, or until fully firm.
Assembly
- Once the Jello is set, carefully remove them from the molds and spoon a bit of mixed fruit into the center of each piece.
- Top each Jello piece with a dollop of whipped topping and add fresh mint if desired.
- Arrange on a colorful platter and serve.
Notes
Keep Jello in an airtight container in the refrigerator for up to 5 days. They can be frozen but may lose some texture upon thawing. Let them sit at room temperature for a few minutes before serving.
