Equipment

  • Large skillet
  • Mixing bowl
  • Spatula or tongs

Ingredients

  • For the Chicken:
  • 4 boneless skinless chicken breasts
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • 2 tbsp olive oil
  • For the Jalapeño Peach Glaze:
  • 2 ripe peaches diced (or 1 cup canned peaches, drained and diced)
  • 1 –2 jalapeños finely chopped (adjust to taste)
  • 1/4 cup honey
  • 1/4 cup soy sauce
  • 1 tbsp apple cider vinegar
  • 2 cloves garlic minced
  • 1/4 tsp red pepper flakes optional, for extra heat
  • Garnish:
  • Fresh peach slices
  • Chopped cilantro or parsley

Instructions

  • Prepare the Chicken:
  • Season the chicken breasts with salt, pepper, and paprika.
  • Sear the Chicken:
  • Heat olive oil in a large skillet over medium heat. Add the chicken breasts and sear for 4–5 minutes on each side until golden brown. Remove the chicken from the skillet and set aside.
  • Make the Jalapeño Peach Glaze:
  • In the same skillet, add diced peaches, jalapeños, honey, soy sauce, apple cider vinegar, garlic, and red pepper flakes. Cook over medium heat, stirring frequently, for 5–7 minutes until the peaches soften and the mixture thickens slightly.
  • Cook the Chicken in the Glaze:
  • Return the chicken to the skillet, spooning the glaze over the top. Reduce the heat to low and simmer for 8–10 minutes, or until the chicken is cooked through (internal temperature should reach 165°F/74°C).
  • Serve and Garnish:
  • Transfer the chicken to a serving plate, spoon the glaze over the top, and garnish with fresh peach slices and chopped cilantro or parsley.
