Prepare the Chicken:
Season the chicken breasts with salt, pepper, and paprika.
Sear the Chicken:
Heat olive oil in a large skillet over medium heat. Add the chicken breasts and sear for 4–5 minutes on each side until golden brown. Remove the chicken from the skillet and set aside.
Make the Jalapeño Peach Glaze:
In the same skillet, add diced peaches, jalapeños, honey, soy sauce, apple cider vinegar, garlic, and red pepper flakes. Cook over medium heat, stirring frequently, for 5–7 minutes until the peaches soften and the mixture thickens slightly.
Cook the Chicken in the Glaze:
Return the chicken to the skillet, spooning the glaze over the top. Reduce the heat to low and simmer for 8–10 minutes, or until the chicken is cooked through (internal temperature should reach 165°F/74°C).
Serve and Garnish:
Transfer the chicken to a serving plate, spoon the glaze over the top, and garnish with fresh peach slices and chopped cilantro or parsley.
