  • 1/3 cup melted coconut oil (or vegetable oil) Can substitute with vegetable oil.
  • 1/2 cup sugar Adjust based on sweetness preference.
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • pinch salt
  • 1 cup all-purpose flour
  • 1/2 cup walnuts or pecans (optional) Fold into the batter if using.

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Line a muffin tin with paper liners or lightly grease it with oil.
  3. In a large bowl, combine the mashed bananas, melted coconut oil, sugar, beaten egg, and vanilla extract. Stir well until smooth.
  4. In another bowl, toss together the baking soda, salt, and flour.
  5. Gradually mix the dry ingredients into the wet mixture, avoiding overmixing.
  6. Fold in the nuts if using.
  7. Fill each muffin cup about two-thirds full with batter.
Baking
  1. Bake for 18-20 minutes or until a toothpick inserted comes out clean.
  2. Let the muffins cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely.
