  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 cup fresh peaches diced (peeled if desired)

Instructions
 

  • Step 1: Preheat the Oven
  • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
  • Step 2: Cream Butter and Sugars
  • In a mixing bowl, beat the softened butter, granulated sugar, and brown sugar together until light and fluffy.
  • Step 3: Add Wet Ingredients
  • Mix in the egg and vanilla extract until fully incorporated.
  • Step 4: Combine Dry Ingredients
  • In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  • Step 5: Fold in the Peaches
  • Gently fold the diced peaches into the cookie dough. Be careful not to overmix to avoid breaking down the peaches.
  • Step 6: Scoop and Shape
  • Using a cookie scoop or tablespoon, drop rounded spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  • Step 7: Bake
