Ingredients
  

  • For the Pineapple Rings:
  • 1 fresh pineapple peeled, cored, and sliced into 1/2-inch rings
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground cinnamon optional
  • 2 large eggs
  • 1/2 cup shredded sweetened coconut
  • 1/2 cup panko breadcrumbs
  • Vegetable oil for frying
  • For Serving:
  • Powdered sugar for dusting (optional)
  • Honey or caramel sauce for drizzling (optional)
  • Vanilla ice cream optional

Instructions
 

  • Prepare the Pineapple Rings:
  • Slice the pineapple into 1/2-inch rings and pat dry with paper towels to remove excess moisture.
  • Set Up Your Coating Station:
  • In one bowl, mix the flour, salt, and cinnamon (if using).
  • In a second bowl, beat the eggs.
  • In a third bowl, combine the shredded coconut and panko breadcrumbs.
  • Coat the Pineapple Rings:
  • Dredge each pineapple ring in the flour mixture, ensuring it’s evenly coated. Shake off excess.
  • Dip the floured ring into the beaten eggs, letting any excess drip off.
  • Finally, press the ring into the coconut-panko mixture, coating it completely.
  • Heat the Oil:
  • In a deep frying pan or skillet, heat about 1–2 inches of vegetable oil over medium-high heat. The oil should reach around 350°F (175°C).
  • Fry the Pineapple Rings:
  • Carefully place the coated pineapple rings into the hot oil, frying a few at a time.
  • Cook for 2–3 minutes per side, or until golden brown and crispy.
  • Use tongs or a slotted spoon to remove the rings and transfer them to a plate lined with paper towels to drain excess oil.
  • Serve and Enjoy:
  • Dust the fried pineapple rings with powdered sugar, drizzle with honey or caramel sauce, and serve warm. For an extra indulgent treat, pair them with a scoop of vanilla ice cream!
