Irresistible Fried Pineapple Rings with Coconut Crust

Ingredients
  

  • For the Pineapple Rings:
  • 1 fresh pineapple peeled, cored, and sliced into 1/2-inch rings
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground cinnamon optional
  • 2 large eggs
  • 1/2 cup shredded sweetened coconut
  • 1/2 cup panko breadcrumbs
  • Vegetable oil for frying
  • For Serving:
  • Powdered sugar for dusting (optional)
  • Honey or caramel sauce for drizzling (optional)
  • Vanilla ice cream optional

Method
 

  1. Prepare the Pineapple Rings:
  2. Slice the pineapple into 1/2-inch rings and pat dry with paper towels to remove excess moisture.
  3. Set Up Your Coating Station:
  4. In one bowl, mix the flour, salt, and cinnamon (if using).
  5. In a second bowl, beat the eggs.
  6. In a third bowl, combine the shredded coconut and panko breadcrumbs.
  7. Coat the Pineapple Rings:
  8. Dredge each pineapple ring in the flour mixture, ensuring it’s evenly coated. Shake off excess.
  9. Dip the floured ring into the beaten eggs, letting any excess drip off.
  10. Finally, press the ring into the coconut-panko mixture, coating it completely.
  11. Heat the Oil:
  12. In a deep frying pan or skillet, heat about 1–2 inches of vegetable oil over medium-high heat. The oil should reach around 350°F (175°C).
  13. Fry the Pineapple Rings:
  14. Carefully place the coated pineapple rings into the hot oil, frying a few at a time.
  15. Cook for 2–3 minutes per side, or until golden brown and crispy.
  16. Use tongs or a slotted spoon to remove the rings and transfer them to a plate lined with paper towels to drain excess oil.

  18. Dust the fried pineapple rings with powdered sugar, drizzle with honey or caramel sauce, and serve warm. For an extra indulgent treat, pair them with a scoop of vanilla ice cream!
