Candy Base Ingredients
  • 4 cups powdered sugar
  • 1 8 oz package cream cheese, softened Let sit out for 30 minutes for easier mixing.
  • 1 teaspoon vanilla extract
  • 2 cups shredded coconut Can be substituted with crushed graham crackers.
Toppings
  • Cocoa powder or chocolate sprinkles for dusting Use for coating the candies.

Preparation
  1. Start with a clean surface and gather all your ingredients.
  2. In a large bowl, combine your softened cream cheese and vanilla extract. Mix until smooth and creamy.
  3. Gradually add the powdered sugar, mixing thoroughly until the texture is dough-like.
  4. Fold in the shredded coconut until well combined with the cream cheese mixture.
  5. Scoop out small portions of the mixture and roll them into the shape of mini potatoes, about the size of a walnut.
  6. Roll your candy in cocoa powder or sprinkle with chocolate sprinkles for an adorable finish.
  7. Place your candies in the refrigerator for about 30 minutes to set before serving.

Notes

To store leftovers, place in an airtight container in the refrigerator for up to a week; can also be frozen for up to three months.
