Method

  1. Prepare the Dough:
  2. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. In a large mixing bowl, cream the butter, cream cheese, and sugar until light and fluffy.
  4. Beat in the egg and vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Wrap the dough in plastic wrap and refrigerate for at least 1 hour (or overnight).
  7. Preheat Oven:
  8. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  9. Roll Out the Dough:
  10. On a lightly floured surface, roll out the dough to about 1/8-inch thickness.
  11. Use cookie cutters to cut out rounds or your desired shape.
  12. Fill and Fold:
  13. Place a small dollop of jam in the center of each cut-out. Sprinkle with chopped nuts or mini chocolate chips, if desired.
  14. Fold the edges of the cookie over the filling, pinching gently to seal.
  15. Bake:
  16. Place the cookies on the prepared baking sheet, leaving a bit of space between each.
  17. Bake for 12–15 minutes, or until the edges are lightly golden.
  18. Let cool completely on a wire rack.
  19. Dust with Powdered Sugar:
  20. Once cooled, generously dust the cookies with powdered sugar for a sweet finish.
