  • 2 pounds chicken thighs or drumsticks, skinless and boneless
  • 2 tablespoons olive oil
  • 2 large onions, finely chopped
  • 3 tablespoons sweet Hungarian paprika
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup sour cream
  • to taste salt and pepper
  • Fresh parsley for garnish

Preparation
  1. Cut the chicken into bite-sized pieces, and season them with salt and pepper.
  2. Heat the olive oil in a large skillet or Dutch oven over medium heat.
  3. Add the onions and sauté until they soften and become translucent, about 5-7 minutes.
  4. Stir in the sweet Hungarian paprika and minced garlic, cooking for about a minute until aromatic.
  5. Add the chicken pieces to the skillet, stirring until they are coated in the spice mixture. Cook for another 5-7 minutes until the chicken starts to brown slightly.
  6. Pour in the chicken broth and bring it to a simmer. Cover the skillet and let it cook for about 25 minutes until the chicken is fully cooked and tender.
  7. Reduce the heat to low and stir in the sour cream, allowing it to heat through without boiling. Adjust the seasoning if necessary.
  8. Sprinkle fresh parsley over the top and serve hot with rice or noodles!

Notes

Use fresh Hungarian paprika for the best flavor and ensure you keep the heat low when adding sour cream to prevent curdling. You can also experiment with adding vegetables like mushrooms or carrots.
