Preparation
- Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan or line it with parchment paper for easy removal.
- In a large mixing bowl, combine the mashed bananas, crushed pineapple, vegetable oil, sugar, and eggs. Whisk until smooth and well combined.
- In a separate bowl, whisk together the flour, baking powder, baking soda, ground cinnamon, and salt.
- Gradually add the dry ingredients to the banana mixture until just combined. Avoid overmixing.
- Gently fold in the chopped pecans (or walnuts) until evenly distributed in the batter.
Baking
- Pour the batter into the prepared loaf pan and bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.
- Allow the bread to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
Making the Frosting
- In the meantime, prepare the Cinnamon Cream Cheese Frosting by beating the softened cream cheese and butter together until smooth.
- Gradually add the powdered sugar, vanilla extract, and ground cinnamon, beating until fluffy and well combined.
- Once the bread is completely cooled, spread the frosting generously over the top.
