For the Bread
  • 3 pieces ripe bananas, mashed Use very ripe bananas for best flavor.
  • 1 cup crushed pineapple, drained Ensure it is well drained to avoid excess moisture.
  • 1/2 cup vegetable oil
  • 1 cup granulated sugar
  • 2 large eggs
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1 cup chopped pecans (or walnuts) Optional, for additional crunch.
For the Frosting
  • 8 oz cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan or line it with parchment paper for easy removal.
  2. In a large mixing bowl, combine the mashed bananas, crushed pineapple, vegetable oil, sugar, and eggs. Whisk until smooth and well combined.
  3. In a separate bowl, whisk together the flour, baking powder, baking soda, ground cinnamon, and salt.
  4. Gradually add the dry ingredients to the banana mixture until just combined. Avoid overmixing.
  5. Gently fold in the chopped pecans (or walnuts) until evenly distributed in the batter.
Baking
  1. Pour the batter into the prepared loaf pan and bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.
  2. Allow the bread to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
Making the Frosting
  1. In the meantime, prepare the Cinnamon Cream Cheese Frosting by beating the softened cream cheese and butter together until smooth.
  2. Gradually add the powdered sugar, vanilla extract, and ground cinnamon, beating until fluffy and well combined.
  3. Once the bread is completely cooled, spread the frosting generously over the top.

Notes

Serve with a fresh fruit salad or a scoop of vanilla ice cream. Pairs beautifully with coffee or tea.
