Ingredients
  

For the biscuits
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed Use cold butter for flaky biscuits.
  • 3/4 cup buttermilk Almond milk mixed with vinegar can be used for a dairy-free version.
For the chicken
  • 1 pound chicken breasts Use halal-certified chicken if needed.
  • 1/2 cup hot honey Adjust quantity to taste.
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • Salt and pepper to taste Use according to your preference.

Method
 

Preparation of Biscuits
  1. In a large bowl, mix the flour, baking powder, and salt.
  2. Add the cold, cubed butter and blend using your fingers or a pastry blender until the mixture resembles coarse crumbs.
  3. Stir in the buttermilk until just combined.
Shaping the Biscuits
  1. Turn the dough onto a floured surface and gently knead it 2-3 times until it comes together.
  2. Pat it into a 1-inch thick round and cut out biscuits using a round cutter. Place them on a baking sheet lined with parchment paper.
Baking the Biscuits
  1. Preheat your oven to 425°F (220°C) and bake the biscuits for 12-15 minutes or until they are golden brown.
Preparing the Chicken
  1. While the biscuits bake, season the chicken breasts with garlic powder, paprika, salt, and pepper.
  2. Heat a non-stick skillet over medium heat and add a little oil. Cook the chicken breasts for about 6-7 minutes on each side, or until they reach an internal temperature of 165°F (75°C).
Assembling & Serving
  1. Once the chicken is cooked, remove it from the skillet and let it rest. Slice the chicken and drizzle it generously with hot honey.
  2. Split the biscuits, place sliced chicken in between, and finish with a drizzle of more hot honey. Enjoy warm with your favorite sides!

Notes

Watch biscuits closely to avoid over-baking. Avoid overworking the biscuit dough for light, fluffy biscuits. Store leftovers in an airtight container in the refrigerator for up to 3 days, or freeze for up to 2 months. Reheat in a preheated oven at 350°F (175°C) for 10-15 minutes.
