Preparation of Biscuits
- In a large bowl, mix the flour, baking powder, and salt.
- Add the cold, cubed butter and blend using your fingers or a pastry blender until the mixture resembles coarse crumbs.
- Stir in the buttermilk until just combined.
Shaping the Biscuits
- Turn the dough onto a floured surface and gently knead it 2-3 times until it comes together.
- Pat it into a 1-inch thick round and cut out biscuits using a round cutter. Place them on a baking sheet lined with parchment paper.
Baking the Biscuits
- Preheat your oven to 425°F (220°C) and bake the biscuits for 12-15 minutes or until they are golden brown.
Preparing the Chicken
- While the biscuits bake, season the chicken breasts with garlic powder, paprika, salt, and pepper.
- Heat a non-stick skillet over medium heat and add a little oil. Cook the chicken breasts for about 6-7 minutes on each side, or until they reach an internal temperature of 165°F (75°C).
Assembling & Serving
- Once the chicken is cooked, remove it from the skillet and let it rest. Slice the chicken and drizzle it generously with hot honey.
- Split the biscuits, place sliced chicken in between, and finish with a drizzle of more hot honey. Enjoy warm with your favorite sides!
Notes
Watch biscuits closely to avoid over-baking. Avoid overworking the biscuit dough for light, fluffy biscuits. Store leftovers in an airtight container in the refrigerator for up to 3 days, or freeze for up to 2 months. Reheat in a preheated oven at 350°F (175°C) for 10-15 minutes.
