Salad Ingredients
  • 2 large Honeycrisp apples, sliced thin
  • 1 cup crumbled feta cheese
  • 1/2 cup walnuts, roughly chopped or any nut of your choice
  • 4 cups mixed greens arugula, spinach, or any leafy greens
Dressing
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons balsamic vinegar
  • Salt and pepper to taste

Method
 

Preparation
  1. Start by washing and drying your mixed greens.
  2. Thinly slice the Honeycrisp apples and chop the walnuts if they’re whole.
Mix the Dressing
  1. In a small bowl, whisk together the olive oil and balsamic vinegar. Season with salt and pepper to taste.
Toss the Salad
  1. In a large salad bowl, add the mixed greens and pour the dressing over. Gently toss so the greens are evenly coated.
  2. Layer the sliced apples on top of the greens and sprinkle the crumbled feta cheese and chopped walnuts over the salad.
  3. Give the salad one last gentle toss to combine all the flavors, making sure not to crush the feta or apples.
Serve
  1. Enjoy immediately as a fresh side dish or light lunch!

Notes

Store leftovers in an airtight container in the refrigerator for up to 2 days. Add dressing just before serving to prevent greens from wilting. This salad is not suited for reheating.
