Preparation
- Start by washing and drying your mixed greens.
- Thinly slice the Honeycrisp apples and chop the walnuts if they’re whole.
Mix the Dressing
- In a small bowl, whisk together the olive oil and balsamic vinegar. Season with salt and pepper to taste.
Toss the Salad
- In a large salad bowl, add the mixed greens and pour the dressing over. Gently toss so the greens are evenly coated.
- Layer the sliced apples on top of the greens and sprinkle the crumbled feta cheese and chopped walnuts over the salad.
- Give the salad one last gentle toss to combine all the flavors, making sure not to crush the feta or apples.
Serve
- Enjoy immediately as a fresh side dish or light lunch!
Notes
Store leftovers in an airtight container in the refrigerator for up to 2 days. Add dressing just before serving to prevent greens from wilting. This salad is not suited for reheating.
