  • 1 pound fresh carrots, peeled and cut into sticks (about 1-2 inches long)
  • 3 tablespoons honey
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • to taste fresh thyme (optional, for garnishing) Can be used for garnish

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. Peel and cut your fresh carrots into sticks.
  3. In a large bowl, combine honey, olive oil, salt, and black pepper. Toss the carrots until well coated.
  4. Line a baking sheet with parchment paper. Spread the honey-coated carrots in a single layer.
Cooking
  1. Place the baking sheet in the preheated oven and roast the carrots for about 25-30 minutes, stirring halfway through.
  2. Once removed from the oven, sprinkle fresh thyme on top if desired.
  3. Serve the carrots warm.

Notes

For a delightful alternative, consider using maple syrup instead of honey. Store leftovers in an airtight container for up to 3 days or freeze for one month. Reheat in the oven at 350°F (175°C) for 10-15 minutes.
