Preparation
- Preheat your oven to 425°F (220°C).
- Peel and cut your fresh carrots into sticks.
- In a large bowl, combine honey, olive oil, salt, and black pepper. Toss the carrots until well coated.
- Line a baking sheet with parchment paper. Spread the honey-coated carrots in a single layer.
Cooking
- Place the baking sheet in the preheated oven and roast the carrots for about 25-30 minutes, stirring halfway through.
- Once removed from the oven, sprinkle fresh thyme on top if desired.
- Serve the carrots warm.
Notes
For a delightful alternative, consider using maple syrup instead of honey. Store leftovers in an airtight container for up to 3 days or freeze for one month. Reheat in the oven at 350°F (175°C) for 10-15 minutes.
