  • 1 pound key carrots, washed, peeled, and sliced Use uniform pieces about ½ inch thick
  • 2 tablespoons honey Can be substituted with maple syrup
  • 2 tablespoons olive oil
  • to taste Salt Adjust according to preference
  • to taste Pepper Adjust according to preference
  • optional Fresh parsley, chopped For garnishing

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Wash and peel the carrots, then slice them into uniform pieces about ½ inch thick.
  3. In a large bowl, combine the carrots, honey, olive oil, salt, and pepper. Toss until well-coated.
  4. Spread the carrots out in a single layer on a baking tray lined with parchment paper.
Roasting
  1. Place the tray in the preheated oven and roast for 25-30 minutes, stirring halfway through, until golden-brown and fork-tender.
  2. Remove from the oven and transfer to a serving bowl. Optionally, sprinkle freshly chopped parsley on top before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3-4 days or freeze for up to 2 months. Reheat in a 350°F (175°C) oven until heated through.
