Preparation
- Preheat your oven to 400°F (200°C).
- Wash and peel the carrots, then slice them into uniform pieces about ½ inch thick.
- In a large bowl, combine the carrots, honey, olive oil, salt, and pepper. Toss until well-coated.
- Spread the carrots out in a single layer on a baking tray lined with parchment paper.
Roasting
- Place the tray in the preheated oven and roast for 25-30 minutes, stirring halfway through, until golden-brown and fork-tender.
- Remove from the oven and transfer to a serving bowl. Optionally, sprinkle freshly chopped parsley on top before serving.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3-4 days or freeze for up to 2 months. Reheat in a 350°F (175°C) oven until heated through.
