Ingredients
  

For the chicken
  • 4 pieces boneless, skinless chicken breasts Ensure to rinse and pat dry before preparation.
  • 1/2 cup honey
  • 1/4 cup Dijon mustard Can substitute with yellow or spicy brown mustard.
  • 1 cup shredded cheese (cheddar or mozzarella) Add towards the end of baking.
  • Salt and pepper to taste Enhances flavors.
  • Olive oil For coating the chicken.
  • Optional: fresh herbs for garnish

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Rinse the chicken breasts under cold water and pat them dry with a paper towel.
  3. Lightly coat the chicken breasts with olive oil, then sprinkle salt and pepper all over.
Making the Glaze
  1. In a mixing bowl, combine the honey and Dijon mustard. Stir together until smooth.
Baking
  1. Place the seasoned chicken breasts in a baking dish and pour the honey mustard mixture over the chicken.
  2. Bake for about 20-25 minutes, or until the internal temperature of the chicken reaches 165°F (75°C).
  3. In the last 5 minutes of baking, sprinkle shredded cheese over the chicken.
  4. Remove from oven and let it rest for a few minutes.
Serving
  1. Garnish with fresh herbs if desired, and serve warm.

Notes

Leftovers can be refrigerated for up to 3 days or frozen for 3 months. Reheat in the oven at 350°F (175°C) for 15-20 minutes to maintain texture.
