Preparation
- Preheat your oven to 375°F (190°C).
- Rinse the chicken breasts under cold water and pat them dry with a paper towel.
- Lightly coat the chicken breasts with olive oil, then sprinkle salt and pepper all over.
Making the Glaze
- In a mixing bowl, combine the honey and Dijon mustard. Stir together until smooth.
Baking
- Place the seasoned chicken breasts in a baking dish and pour the honey mustard mixture over the chicken.
- Bake for about 20-25 minutes, or until the internal temperature of the chicken reaches 165°F (75°C).
- In the last 5 minutes of baking, sprinkle shredded cheese over the chicken.
- Remove from oven and let it rest for a few minutes.
Serving
- Garnish with fresh herbs if desired, and serve warm.
Notes
Leftovers can be refrigerated for up to 3 days or frozen for 3 months. Reheat in the oven at 350°F (175°C) for 15-20 minutes to maintain texture.
