  • 1 cup honey Use a good quality honey for best flavor.
  • 2 large eggs Use room temperature for better mixing.
  • 1 teaspoon vanilla extract For added flavor.
Dry Ingredients
  • 2 cups all-purpose flour Alternatively, half can be replaced with whole wheat flour.
  • 1 cup sugar Granulated sugar works best.
  • 1 teaspoon baking powder Helps the bread rise.
  • 1/2 teaspoon baking soda Extra leavening agent.
  • 1/2 teaspoon salt Enhances flavor.
Add-ins
  • 1 cup chopped pecans Gently fold in for texture.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease or line a loaf pan with parchment paper.
  2. In a large bowl, cream together the softened butter and sugar until fluffy.
  3. Add in the honey, eggs, and vanilla extract, and mix until fully incorporated.
  4. In another bowl, whisk together the flour, baking powder, baking soda, and salt.
  5. Gradually add this mixture to your wet ingredients until just combined.
  6. Fold in the chopped pecans gently, making sure not to overmix the batter.
Baking
  1. Pour the batter into your prepared loaf pan.
  2. Bake in the preheated oven for about 45-50 minutes, or until a toothpick inserted into the center comes out clean.
  3. Allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Notes

For storing, refrigerate leftover bread for up to 1 week or wrap it tightly in plastic wrap and freeze for up to 3 months. To reheat, slice and warm in a toaster oven or microwave.
