Preparation
- Preheat your oven to 350°F (175°C) and grease or line a loaf pan with parchment paper.
- In a large bowl, cream together the softened butter and sugar until fluffy.
- Add in the honey, eggs, and vanilla extract, and mix until fully incorporated.
- In another bowl, whisk together the flour, baking powder, baking soda, and salt.
- Gradually add this mixture to your wet ingredients until just combined.
- Fold in the chopped pecans gently, making sure not to overmix the batter.
Baking
- Pour the batter into your prepared loaf pan.
- Bake in the preheated oven for about 45-50 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
Notes
For storing, refrigerate leftover bread for up to 1 week or wrap it tightly in plastic wrap and freeze for up to 3 months. To reheat, slice and warm in a toaster oven or microwave.
