  • 4 tablespoons unsalted butter
  • 3 tablespoons honey More to taste.
  • ½ cup milk or heavy cream Use heavy cream for added richness.
  • Salt and pepper to taste

Preparation
  1. Place the cubed sweet potatoes in a large pot and cover them with cold water.
  2. Bring to a boil over medium-high heat and cook for about 15-20 minutes or until tender when pierced with a fork.
  3. Drain the sweet potatoes well and return them to the pot.
  4. Add the butter, honey, milk, salt, and pepper into the pot with the sweet potatoes.
  5. Using a potato masher or fork, mash the sweet potatoes until they reach your desired consistency.
  6. Taste the mixture and adjust honey or seasoning as needed.
  7. Transfer the mashed sweet potatoes to a serving bowl and drizzle with extra honey if desired.

Notes

For silkier mashed potatoes, increase the milk or cream to your liking. Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stove, adding a splash of milk. Can be frozen for up to 3 months.
