Ingredients
  

For the Marinade
  • 1 cup beer (or chicken broth) Substitute with chicken broth if preferred
  • ½ cup honey
  • ½ cup BBQ sauce Your favorite brand
  • 2 tablespoons olive oil
  • 2 tablespoons soy sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste Salt and pepper
For the Skewers
  • 2 lbs boneless, skinless chicken thighs Cut into 1-inch pieces
  • Skewers Soak in water if wooden

Method
 

Preparation
  1. In a large mixing bowl, combine the beer, honey, BBQ sauce, olive oil, soy sauce, garlic powder, onion powder, salt, and pepper. Whisk together until fully combined.
  2. Add the chicken pieces, ensuring they’re well-coated in the marinade. Let marinate for 20–30 minutes to enhance flavors.
  3. Preheat your grill to medium-high heat. If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
Cooking
  1. Thread the marinated chicken pieces onto the skewers (3–4 pieces per skewer), leaving a little space between each piece for even cooking.
  2. Place the skewers on the grill, cooking for about 5–7 minutes on each side or until the chicken reaches an internal temperature of 165°F. Brush with any extra marinade during cooking for added flavor.
  3. Once cooked, remove the skewers from the grill and let them rest for a few minutes before serving. Optionally, drizzle with extra honey or sprinkle with chopped green onions.

Notes

Feel free to add bell peppers, cherry tomatoes, or zucchini pieces to the skewers for extra color and flavor. Store leftovers in an airtight container in the refrigerator for up to 3 days, or freeze for up to 2 months.
