- In a high-speed blender or food processor, add the frozen pineapple chunks, coconut milk, honey or agave syrup (if using), and vanilla extract.
- Start on low speed to break up the pineapple, then gradually increase to high speed. Blend until smooth and creamy.
- If the mixture is too thick, add a splash more coconut milk. If it's too thin, add more frozen pineapple.
- Serve immediately for the best texture. If a firmer texture is desired, freeze in an airtight container for 1-2 hours before scooping.
- Scoop into bowls, add toppings, and enjoy!
Notes
For best results, freeze pineapple chunks overnight. If leftovers remain, store in an airtight container in the freezer for up to 1 week. Allow to sit at room temperature for 5-10 minutes before scooping for easier service.
