  1. In a high-speed blender or food processor, add the frozen pineapple chunks, coconut milk, honey or agave syrup (if using), and vanilla extract.
  2. Start on low speed to break up the pineapple, then gradually increase to high speed. Blend until smooth and creamy.
  3. If the mixture is too thick, add a splash more coconut milk. If it's too thin, add more frozen pineapple.
  4. Serve immediately for the best texture. If a firmer texture is desired, freeze in an airtight container for 1-2 hours before scooping.
  5. Scoop into bowls, add toppings, and enjoy!

Notes

For best results, freeze pineapple chunks overnight. If leftovers remain, store in an airtight container in the freezer for up to 1 week. Allow to sit at room temperature for 5-10 minutes before scooping for easier service.
