  • 2 pieces boneless, skinless chicken breasts
  • 2 pieces ripe avocados, halved and pitted Ensure they are perfectly ripe for best taste
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • to taste Salt and pepper
  • Fresh cilantro, chopped (for garnish)
  • Lime wedges (for serving)

Method
 

Preparation
  1. In a small bowl, combine olive oil, garlic powder, paprika, salt, and pepper. Rub this mixture all over the chicken breasts. Let them marinate for about 15 minutes.
  2. Preheat your grill to medium-high heat.
Cooking
  1. Once the grill is hot, place the chicken on it and cook for about 6-7 minutes per side, or until they reach an internal temperature of 165°F. Remove from the grill and allow to rest for a few minutes.
  2. While the chicken is resting, cut the avocados in half and remove the pit. If desired, add a light sprinkle of lime juice to enhance flavor.
Serving
  1. Slice the grilled chicken and serve it atop the avocado halves. Garnish with fresh cilantro and serve with lime wedges on the side.

Notes

Use ripe avocados for the best flavor. If possible, marinate the chicken for up to an hour for deeper flavor absorption. Use a meat thermometer to ensure the chicken is perfectly cooked and juicy.
