Preparation
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Combine water and butter in a medium saucepan over medium heat. Stir until the butter melts completely.
- Add the flour to the saucepan and stir vigorously until the mixture forms a ball that pulls away from the sides of the pan. This should take about 1-2 minutes.
- Remove from heat and allow to cool for a few minutes. You want it warm but not hot enough to cook the eggs.
- Incorporate the eggs, one at a time, mixing well after each addition. The mixture should become smooth and glossy.
- Stir in the cheese and fresh herbs, season with salt and pepper, and mix until everything is well combined.
- Spoon the mixture onto the prepared baking sheet, leaving space between each puff for them to expand.
Baking
- Bake for 20-25 minutes, or until they are puffy and golden brown.
- Remove from the oven and let cool slightly before serving. Enjoy them warm for the best taste!
