For the Cheese Puff Dough

  • 1 cup water
  • 1/2 cup unsalted butter
  • 1 cup all-purpose flour
  • 4 large eggs
  • 1 cup shredded cheese (cheddar, Gruyère, or your favorite)
  • 1 tablespoon fresh herbs (such as thyme, chives, or rosemary) Customize to suit your taste.
  • Salt and pepper To taste.

Preparation

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • Combine water and butter in a medium saucepan over medium heat. Stir until the butter melts completely.
  • Add the flour to the saucepan and stir vigorously until the mixture forms a ball that pulls away from the sides of the pan. This should take about 1-2 minutes.
  • Remove from heat and allow to cool for a few minutes. You want it warm but not hot enough to cook the eggs.
  • Incorporate the eggs, one at a time, mixing well after each addition. The mixture should become smooth and glossy.
  • Stir in the cheese and fresh herbs, season with salt and pepper, and mix until everything is well combined.
  • Spoon the mixture onto the prepared baking sheet, leaving space between each puff for them to expand.

Baking

  • Bake for 20-25 minutes, or until they are puffy and golden brown.
  • Remove from the oven and let cool slightly before serving. Enjoy them warm for the best taste!

Notes

Experiment with different cheeses or herbs for unique flavors. Store leftovers in an airtight container for up to three days, or freeze unbaked puffs for up to three months.
