  • 1 cup Caesar dressing (store-bought or homemade)
  • 1 tablespoon olive oil

  • 8 pieces taco shells (soft or crunchy) your choice
  • 2 cups romaine lettuce, chopped
  • ½ cup shaved Parmesan cheese
  • 1 squeeze fresh lemon juice for zest

Preparation
  1. Trim any excess fat from the chicken breasts and season both sides generously with salt and black pepper.
Cooking
  1. In a large skillet over medium heat, warm the olive oil. Once hot, add the seasoned chicken breasts to the pan.
  2. Cook the chicken for about 5-7 minutes on each side, occasionally pressing down with a spatula to help it flatten and sear nicely.
  3. Once cooked through, remove the chicken from the pan and let it rest for a few minutes.
  4. After resting, shred the chicken with two forks or simply smash it into bite-sized pieces.
Incorporating Dressing
  1. In a mixing bowl, combine the shredded chicken with the Caesar dressing, ensuring every piece is coated beautifully.
Assembly
  1. Warm the taco shells and fill each one with the chicken mixture, followed by a generous helping of chopped romaine lettuce and freshly shaved Parmesan cheese.
  2. Squeeze fresh lemon juice over the tacos for a little extra zing.
