- Add the chicken broth to the bottom of your Instant Pot.
- Place the frozen chicken breasts directly into the Instant Pot and season with garlic powder, onion powder, Italian seasoning, salt, and pepper. Drizzle with olive oil if desired.
- Add your chosen vegetables, such as carrots and bell peppers.
Cooking
- Secure the lid on your Instant Pot, making sure the valve is set to 'sealing.' Select the manual setting and set the cook time for 25 minutes.
- Allow the Instant Pot to naturally release pressure for about 10 minutes before manually releasing any remaining pressure.
- Carefully open the lid and check that the chicken has reached an internal temperature of at least 165°F.
Serving
- Shred the chicken if desired or serve the breasts whole. Garnish with fresh herbs or a squeeze of lemon for a refreshing finish.
Notes
For even more flavor, consider changing up the seasonings or adding toppings like salsa and avocado. Store leftovers in an airtight container for up to 3 days, or freeze for up to 3 months. Thaw in the fridge overnight before reheating. Follow timing closely to avoid dry chicken.
