Preparation
  1. Add the chicken broth to the bottom of your Instant Pot.
  2. Place the frozen chicken breasts directly into the Instant Pot and season with garlic powder, onion powder, Italian seasoning, salt, and pepper. Drizzle with olive oil if desired.
  3. Add your chosen vegetables, such as carrots and bell peppers.
Cooking
  1. Secure the lid on your Instant Pot, making sure the valve is set to 'sealing.' Select the manual setting and set the cook time for 25 minutes.
  2. Allow the Instant Pot to naturally release pressure for about 10 minutes before manually releasing any remaining pressure.
  3. Carefully open the lid and check that the chicken has reached an internal temperature of at least 165°F.
Serving
  1. Shred the chicken if desired or serve the breasts whole. Garnish with fresh herbs or a squeeze of lemon for a refreshing finish.

Notes

For even more flavor, consider changing up the seasonings or adding toppings like salsa and avocado. Store leftovers in an airtight container for up to 3 days, or freeze for up to 3 months. Thaw in the fridge overnight before reheating. Follow timing closely to avoid dry chicken.
