Ingredients
  

For the Honey BBQ Chicken
  • 4 pieces chicken breasts (or your choice of chicken parts) Bone-in or skin-on chicken can be used for added flavor.
  • 1 cup honey BBQ sauce Adjust sweetness to taste.
  • Salt and pepper to taste
  • Olive oil for cooking Use a drizzle for frying.
For the Creamy Garlic Parmesan Potatoes
  • 2 pounds potatoes (Yukon gold or red) Peel and dice into chunks.
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 2 tablespoons butter For sautéing garlic.
  • Salt and pepper to taste
  • Fresh parsley, chopped for garnish

Method
 

Prepare the Chicken
  1. Season the chicken breasts with salt and pepper.
  2. In a large skillet, heat a drizzle of olive oil over medium-high flame.
  3. Add the chicken to the skillet and cook for about 5-6 minutes on each side until golden brown and cooked through.
  4. Pour the honey BBQ sauce over the cooked chicken, ensuring full coverage. Let it simmer on low heat for a few minutes so the chicken absorbs the flavors.
Make the Creamy Garlic Parmesan Potatoes
  1. Peel and dice your potatoes into even chunks. Boil them in a pot of salted water until tender (about 15-20 minutes).
  2. In a separate saucepan, melt the butter over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.
  3. Reduce the heat, then stir in heavy cream and bring to a gentle simmer. Add the grated Parmesan cheese, stirring until melted and creamy.
  4. Drain the potatoes, then return them to the pot. Pour the creamy mixture over the potatoes, and season with salt and pepper to taste. Mash them until creamy and well combined.

Notes

Leftovers can be stored in separate airtight containers in the refrigerator for up to 3 days. Reheat in the microwave or an oven preheated to 350°F.
