  1. In a large pot over medium heat, add a splash of olive oil. Once hot, add the chopped onion, minced garlic, and chopped green bell pepper. Sauté for about 5 minutes, or until the vegetables have softened.
  2. Add the ground turkey to the pot. Use a wooden spoon to break it apart as it cooks, about 8-10 minutes, until the turkey is cooked through and no longer pink.
  3. Stir in the cumin, oregano, salt, and pepper. Mix well to ensure that all the spices coat the turkey and vegetables.
  4. Add the drained white beans, diced green chilies, and chicken broth to the pot. Stir everything together, and bring the mixture to a gentle simmer.
  5. Allow the chili to simmer for 15-20 minutes, stirring occasionally. This will help the flavors meld beautifully.
