Ingredients
  

Base Ingredients
  • 1 cup silken tofu Provides a creamy texture.
  • 1/4 cup nutritional yeast Adds a cheesy flavor.
  • 1 tablespoon olive oil For greasing or adding flavor.
  • 1 teaspoon garlic powder Enhances flavor.
  • Salt to taste salt Adjust according to preference.
  • Pepper to taste pepper Adjust according to preference.
Vegetable Mix
  • 1/2 cup spinach, chopped Adds nutrients and color.
  • 1/4 cup cherry tomatoes, diced Provides sweetness.
  • 1/4 cup onion, finely chopped Adds flavor.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and prepare a muffin tin by lightly greasing it or using silicone muffin liners.
  2. In a blender or food processor, combine the silken tofu, nutritional yeast, garlic powder, salt, and pepper. Blend until smooth and creamy.
  3. In a mixing bowl, add the chopped spinach, diced cherry tomatoes, and onions to the blended tofu mixture. Stir until well combined.
  4. Spoon the mixture into the prepared muffin tin, filling each cup about 2/3 full.
Baking
  1. Place the muffin tin in the preheated oven and bake for approximately 25-30 minutes, or until the bites are firm and slightly golden brown around the edges.
  2. Let them cool for a few minutes in the tin before carefully removing them. Serve warm and enjoy!

Notes

These bites are customizable. Add herbs, swap vegetables, or include spices. Store in an airtight container in the fridge for up to 5 days or freeze for up to 3 months. Reheat in the microwave or oven.
