Ingredients

For the Marinade
  • 1/2 cup fresh orange juice Freshly squeezed for best flavor
  • 2 tablespoons Dijon mustard
  • 1 tablespoon honey Optional for a touch of sweetness
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme Or other herbs of your choice
  • to taste Salt
  • to taste Pepper
For the Grilled Chicken
  • 4 pieces boneless, skinless chicken breasts

Method

Preparation
  1. In a bowl, whisk together the orange juice, Dijon mustard, honey, minced garlic, thyme, salt, and pepper until well combined.
  2. Place the chicken breasts in a zip-top bag or shallow dish. Pour the marinade over the chicken and seal. Let it marinate in the refrigerator for at least 30 minutes, or up to two hours for maximum flavor.
Cooking
  1. Start your grill and preheat it to medium-high heat. Make sure the grates are clean and lightly oiled to prevent sticking.
  2. Remove the chicken from the marinade, letting any excess drip off. Place the chicken on the grill and cook for about 6-7 minutes on each side or until the internal temperature reaches 165°F (75°C).
  3. Once done, transfer the grilled chicken to a plate and let it rest for about 5 minutes before slicing.
Serving
  1. Slice the chicken and serve on a platter with your favorite sides or atop a fresh salad.

Notes

For a deeper flavor profile, let the chicken marinate overnight. Avoid moving the chicken around too much while grilling to achieve perfect grill marks.
