Ingredients
  

For the Meatballs
  • 1 pound ground chicken (or turkey) You can use chicken or turkey based on preference.
  • 1/4 cup breadcrumbs Whole wheat for a healthier option.
  • 1 large egg
  • 2 cloves garlic, minced
  • 1 tablespoon finely chopped parsley
  • Salt and pepper To taste.
For the Rice Bake
  • 2 cups cooked brown rice
  • 1/4 cup honey
  • 1/4 cup low-sodium soy sauce (or tamari for a gluten-free option)
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 cup steamed vegetables (like peas, carrots, or bell peppers)

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C). This will help create an ideal baking environment for your meatballs.
  2. In a mixing bowl, combine the ground chicken, breadcrumbs, egg, minced garlic, parsley, salt, and pepper. Mix until just combined.
  3. Form the mixture into bite-sized meatballs and place them on a baking sheet.
Cooking
  1. Place the meatballs in the preheated oven and bake for about 20-25 minutes, or until cooked through and golden brown.
  2. While the meatballs are baking, whisk together honey, soy sauce, and minced garlic in a small bowl until well combined.
  3. In a large baking dish, mix the cooked brown rice and steamed vegetables. Once the meatballs are done, add them on top of the rice mixture and pour the honey garlic sauce over it.
  4. Place the dish back in the oven and bake for an additional 10-15 minutes until everything is heated through.
  5. Give it a good stir before serving, and enjoy!

Notes

Experiment with spices or herbs to customize the meatball mixture. Store leftovers in an airtight container in the refrigerator for up to three days.
