  • 2 cups rolled oats
  • 1 cup almond flour Can substitute with oat flour for gluten-free.
  • 1/2 cups salt
  • 1/2 teaspoon baking powder
Wet Ingredients
  • 1/2 cup maple syrup
  • 1/2 cup peanut butter or almond butter For nut-free option, use sunflower seed butter.
  • 1 teaspoon vanilla extract
Mix-ins
  • 1/2 cup dark chocolate chips

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9×9-inch baking dish or line it with parchment paper.
  2. In a large bowl, combine the rolled oats, almond flour, salt, and baking powder. Stir well.
  3. In a separate bowl, mix together the maple syrup, peanut butter, and vanilla extract until smooth.
  4. Gradually pour the wet mixture into the dry ingredients and stir until fully combined. Add a tablespoon of water or milk if the mixture is too thick.
  5. Gently fold in the dark chocolate chips.
  6. Transfer the mixture into the prepared baking dish, spreading it evenly and pressing it down slightly.
  7. Bake for 18-20 minutes or until the edges are golden brown.
  8. Let the bars cool completely in the dish before slicing into squares or rectangles.

Notes

Store in an airtight container at room temperature for up to 5 days or refrigerate for up to 2 weeks. Freeze individual bars wrapped in plastic wrap for up to 3 months.
