Preparation
- Preheat your oven to 350°F (175°C) and grease a 9×9-inch baking dish or line it with parchment paper.
- In a large bowl, combine the rolled oats, almond flour, salt, and baking powder. Stir well.
- In a separate bowl, mix together the maple syrup, peanut butter, and vanilla extract until smooth.
- Gradually pour the wet mixture into the dry ingredients and stir until fully combined. Add a tablespoon of water or milk if the mixture is too thick.
- Gently fold in the dark chocolate chips.
- Transfer the mixture into the prepared baking dish, spreading it evenly and pressing it down slightly.
- Bake for 18-20 minutes or until the edges are golden brown.
- Let the bars cool completely in the dish before slicing into squares or rectangles.
Notes
Store in an airtight container at room temperature for up to 5 days or refrigerate for up to 2 weeks. Freeze individual bars wrapped in plastic wrap for up to 3 months.
