Ingredients

  • 2 cups rolled oats
  • ½ cup almond butter (or any nut butter of choice) Substitutions can be made.
  • ¼ cup honey or maple syrup
  • ½ cup chocolate chips (or dark chocolate chunks) Reserve a few for topping.
  • 1 large ripe banana, mashed
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • ¼ teaspoon salt

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease an 8x8 baking dish.
  2. In a large bowl, mix the almond butter, honey (or maple syrup), mashed banana, and vanilla extract until smooth.
  3. In another bowl, combine the rolled oats, cinnamon, and salt.
  4. Gradually fold the dry ingredients into the wet ingredients, stirring until just combined. Add in the chocolate chips, but save a few for the top!
  5. Press the mixture evenly into the prepared baking dish. Sprinkle the reserved chocolate chips on top.
  6. Bake for about 20-25 minutes or until golden brown. Allow the bars to cool in the pan for at least 10 minutes before cutting them into squares.

Notes

Store in an airtight container in the fridge for up to a week or freeze for longer shelf life. Reheat in the microwave for a warm treat.
