Preparation
- Gather all your vegetables and chicken. Dice the chicken into bite-sized pieces and chop the vegetables as stated in the ingredients list.
- In a large skillet, heat the olive oil over medium-high heat. Make sure it’s nice and hot before adding anything.
Cooking
- Add the chicken pieces to the skillet. Season with salt, black pepper, and paprika. Sauté until the chicken is browned and fully cooked through, about 5-7 minutes.
- Once the chicken is cooked, add minced garlic to the skillet. Sauté for an additional minute to release those lovely aromas.
- Add the bell peppers, zucchini, broccoli, and carrot to the skillet. Stir everything together and cook for another 5-7 minutes, or until the vegetables are tender but still vibrant.
- Sprinkle Italian seasoning over the mixture, giving it a final stir. Adjust the seasoning to taste. Serve hot and enjoy!
Notes
Feel free to substitute any vegetables you have on hand! Timing is key; don't overcook the vegetables; aim for tender-crisp. If things start to stick, add a splash of water or broth to deglaze the pan. Store leftovers in an airtight container in the refrigerator for up to 3 days, or freeze portions for up to 2 months.
