  • 1 cup Bell Peppers, chopped Mix colors for visual appeal.
  • 1 medium Zucchini, sliced
  • 1 cup Broccoli Florets
  • 1 medium Carrot, thinly sliced
  • 2 tablespoons Olive Oil For sautéing.
  • 2 cloves Garlic, minced
  • to taste Salt
  • to taste Black Pepper
  • 1 teaspoon Paprika For that smoky flavor.
  • 1 teaspoon Italian Seasoning

Method
 

Preparation
  1. Gather all your vegetables and chicken. Dice the chicken into bite-sized pieces and chop the vegetables as stated in the ingredients list.
  2. In a large skillet, heat the olive oil over medium-high heat. Make sure it’s nice and hot before adding anything.
Cooking
  1. Add the chicken pieces to the skillet. Season with salt, black pepper, and paprika. Sauté until the chicken is browned and fully cooked through, about 5-7 minutes.
  2. Once the chicken is cooked, add minced garlic to the skillet. Sauté for an additional minute to release those lovely aromas.
  3. Add the bell peppers, zucchini, broccoli, and carrot to the skillet. Stir everything together and cook for another 5-7 minutes, or until the vegetables are tender but still vibrant.
  4. Sprinkle Italian seasoning over the mixture, giving it a final stir. Adjust the seasoning to taste. Serve hot and enjoy!

Notes

Feel free to substitute any vegetables you have on hand! Timing is key; don't overcook the vegetables; aim for tender-crisp. If things start to stick, add a splash of water or broth to deglaze the pan. Store leftovers in an airtight container in the refrigerator for up to 3 days, or freeze portions for up to 2 months.
