Method
- Make the patties:
- In a bowl, mix ground beef, diced onion, egg, breadcrumbs, Worcestershire sauce, garlic powder, salt, and pepper.
- Form into 4 oval patties.
- Sear the steaks:
- Heat oil or butter in a large skillet over medium-high heat.
- Sear the patties for about 4–5 minutes per side until browned. Remove and set aside (they don’t need to be fully cooked yet).
- Prepare the onion gravy:
- In the same skillet, melt 2 tbsp butter.
- Add sliced onions and cook over medium heat until golden and soft (about 8–10 minutes).
- Sprinkle in flour and stir for 1 minute to form a roux.
- Slowly whisk in beef broth and Worcestershire sauce. Bring to a simmer and cook until thickened (3–4 minutes).
- Season with salt, pepper, and mustard/cream if using.
- Simmer the patties in gravy:
- Return the hamburger steaks to the pan, spoon gravy over them, cover, and simmer on low heat for 10–15 minutes until cooked through.
- Serve:
- Serve hot with mashed potatoes, rice, or egg noodles. Spoon plenty of onion gravy over the top.
Notes
Make ahead: Patties and gravy can be made ahead and reheated gently.
Add mushrooms to the gravy for an extra hearty version.
Swap proteins: Try with ground turkey or pork if preferred.
For a Southern twist, serve with buttermilk mashed potatoes or cornbread.
