  • 1 pound ground turkey Can substitute with ground chicken or beef.
  • 2 large sweet potatoes, peeled and diced Can substitute with butternut squash.
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • ½ teaspoon salt and pepper (to taste) Adjust according to preference.
  • Olive oil (for sautéing)

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. Peel and dice your sweet potatoes into small cubes for faster cooking.
  3. In a large skillet, heat a drizzle of olive oil over medium heat. Add the chopped onion and garlic, sautéing until they become translucent, about 3-4 minutes.
  4. Add in the ground turkey, breaking it apart as it cooks. Season with paprika, thyme, salt, and pepper. Cook until the turkey is browned, approximately 5-7 minutes.
  5. Fold in the diced sweet potatoes, coating them with the seasoned turkey mixture.
  6. Pour in the chicken broth to help cook the sweet potatoes through. Bring to a simmer for about 5 minutes, allowing the flavors to meld.
  7. Transfer the mixture into a baking dish and smooth the top. Bake in the preheated oven for 25-30 minutes or until the sweet potatoes are tender and the top is slightly golden.
