Ingredients
  

  • For the Grilled Zucchini:
  • 4 medium zucchini sliced into 1/2-inch thick rounds or lengthwise
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • For the Topping:
  • 1/4 cup crumbled goat cheese
  • 1/4 cup fresh basil thinly sliced
  • 2 tablespoons honey
  • Fresh lemon zest optional

Instructions
 

  • Prepare the Zucchini: Preheat your grill or grill pan over medium heat. Slice the zucchini into rounds or lengthwise, depending on your preference. Drizzle the zucchini slices with olive oil, and season with salt and pepper.
  • Grill the Zucchini: Place the zucchini slices on the grill. Cook for 2–3 minutes per side, or until they are tender and have nice grill marks. Remove from the grill and set aside.
  • Assemble the Dish: Arrange the grilled zucchini on a serving platter. Sprinkle the crumbled goat cheese evenly over the zucchini.
  • Add Basil & Honey: Top with fresh basil leaves and drizzle the honey generously over the zucchini. If desired, zest a little lemon over the dish for an extra burst of freshness.
