Grill the Zucchini: Place the zucchini slices on the grill. Cook for 2–3 minutes per side, or until they are tender and have nice grill marks. Remove from the grill and set aside.
Assemble the Dish: Arrange the grilled zucchini on a serving platter. Sprinkle the crumbled goat cheese evenly over the zucchini.
