Ingredients
  

For the Souvlaki
  • 1 pound chicken breast, cut into cubes Use skinless, boneless chicken breast for best results.
  • 2 tablespoons olive oil Extra virgin olive oil is recommended.
  • 2 teaspoons dried oregano For a more authentic flavor, use Greek oregano.
  • 2 cloves garlic, minced Freshly minced garlic enhances the taste.
  • to taste Salt and pepper Adjust according to your preference.
  • Pita bread, for serving Warm the pita before serving.
  • Lemon wedges, for serving Fresh lemon juice adds brightness.
For the Tzatziki
  • 1 cup Greek yogurt Use full-fat yogurt for richness.
  • 1 cucumber, grated and drained Remove excess moisture from the cucumber.
  • 1 clove garlic, minced Adjust garlic amount according to taste.
  • 1 tablespoon fresh dill, chopped Dill can be adjusted to taste.
  • to taste Salt and pepper Season to your liking.

Method
 

Marinate the Chicken
  1. In a bowl, combine the chicken cubes with olive oil, dried oregano, minced garlic, salt, and pepper. Allow it to marinate for at least 15 minutes.
Prepare the Tzatziki
  1. In a separate bowl, mix the Greek yogurt, grated cucumber, minced garlic, chopped dill, and a pinch of salt and pepper. Set this aside in the refrigerator while you prepare the skewers.
Skewer the Chicken
  1. Thread the marinated chicken cubes onto skewers, leaving a little space between each piece for even cooking.
Grill the Skewers
  1. Preheat a grill or grill pan over medium-high heat. Place the skewers on the grill, cooking for about 10-12 minutes, turning occasionally until the chicken is cooked through and has nice grill marks.
Serve
  1. Warm the pita bread on the grill for a minute, then serve the skewers with the tzatziki sauce and lemon wedges on the side.

Notes

For a Halal-friendly option, substitute chicken with beef or lamb. Marinate the chicken longer (up to 24 hours) for enhanced flavor. Ensure the grill is hot before adding the skewers for the best char.
