Ingredients
  

For the marinade
  • 1.5 lbs chicken breast, cubed Use fresh chicken breast for best results.
  • 1/4 cup olive oil Extra virgin olive oil adds great flavor.
  • 3 tbsp lemon juice Freshly squeezed is best.
  • 4 cloves garlic, minced Adjust amount to taste.
  • 2 tsp dried oregano
  • 1 tsp salt Adjust to taste.
  • 1/2 tsp pepper Freshly ground pepper is recommended.
For the kabobs
  • 1 medium bell pepper (any color), cut into chunks
  • 1 medium red onion, cut into chunks

Method
 

Preparation
  1. In a bowl, whisk together olive oil, lemon juice, minced garlic, oregano, salt, and pepper to create the marinade.
  2. Add the cubed chicken to the marinade, ensuring each piece is well coated. Cover and marinate in the refrigerator for at least 1 hour.
  3. If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
  4. Thread the marinated chicken, bell pepper, and red onion onto the skewers, alternating for a colorful presentation.
Cooking
  1. Preheat your grill to medium-high heat.
  2. Grill the skewers for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has grill marks.
  3. Remove the skewers from the grill and let them rest for a few minutes before serving.
Serving
  1. Pair the kabobs with your favorite dipping sauces and enjoy!

Notes

Tips: Use halel-friendly beef or lamb as substitutions if desired but adjust cooking time. Ensure not to overcrowd the skewers on the grill for even cooking.
