Preparation
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it with cooking spray.
- In a large bowl, whisk together the all-purpose flour, sugar, baking powder, baking soda, salt, and 1/2 teaspoon of cinnamon.
- In another bowl, combine the buttermilk, egg, vegetable oil, and vanilla extract, mixing well until fully combined.
- Pour the wet ingredients into the dry mixture, stirring gently until just combined. Avoid overmixing.
- Spoon the batter into the prepared muffin tin, filling each cup about two-thirds full.
Baking
- Bake for about 15-18 minutes or until a toothpick inserted into the center comes out clean.
- While the muffins are baking, mix together the extra sugar and cinnamon in a small bowl for the topping.
- Once the muffins are done, remove them from the oven and let them cool for a few minutes.
- While they’re still warm, roll each muffin in the cinnamon sugar mixture until fully coated.
