  • 1/2 cup buttermilk Adds moisture to the muffins

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it with cooking spray.
  2. In a large bowl, whisk together the all-purpose flour, sugar, baking powder, baking soda, salt, and 1/2 teaspoon of cinnamon.
  3. In another bowl, combine the buttermilk, egg, vegetable oil, and vanilla extract, mixing well until fully combined.
  4. Pour the wet ingredients into the dry mixture, stirring gently until just combined. Avoid overmixing.
  5. Spoon the batter into the prepared muffin tin, filling each cup about two-thirds full.
Baking
  1. Bake for about 15-18 minutes or until a toothpick inserted into the center comes out clean.
  2. While the muffins are baking, mix together the extra sugar and cinnamon in a small bowl for the topping.
  3. Once the muffins are done, remove them from the oven and let them cool for a few minutes.
  4. While they’re still warm, roll each muffin in the cinnamon sugar mixture until fully coated.

Notes

To keep muffins fresh, store in an airtight container at room temperature for up to 3 days. For longer storage, freeze for up to 2 months. Reheat in the microwave for 10-15 seconds.
