Ingredients
  

For the Pretzel Dough
  • 4 cups all-purpose flour
  • 1 cup warm water Make sure it's warm, not hot.
  • 2 teaspoons sugar
  • 1 packet active dry yeast (2 ¼ teaspoons)
  • 1 teaspoon salt
  • ½ cup baking soda For boiling the pretzel bombs.
  • Coarse sea salt For topping.
For the Filling
  • 1 pound smoked brisket Finely chopped.
  • 2 cups shredded cheese Cheddar or your preference.

Preparation
  1. In a large mixing bowl, combine warm water, sugar, and yeast. Stir gently and let it sit for about 5 minutes until frothy.
  2. Add the flour and salt in batches, mixing until a dough forms. Knead the dough for about 5 minutes on a floured surface until it becomes smooth and elastic.
Rest the Dough
  1. Place the kneaded dough in a lightly oiled bowl. Cover with a clean towel and let it rest for 20-30 minutes, allowing it to rise.
Preheat the Oven
  1. Preheat your oven to 425°F (220°C) while the dough is resting.
Prepare the Filling
  1. In a medium bowl, mix the chopped smoked brisket with shredded cheese until well combined.
Form the Pretzel Bombs
  1. Divide the dough into equal pieces (about 12).
  2. Flatten each piece into a circle and add about 1 tablespoon of the brisket and cheese mixture in the center.
  3. Fold the dough over the filling, sealing it tightly, and shape it into a ball.
Boil and Bake
  1. Boil water with baking soda in a large pot. Carefully drop in the pretzel bombs for about 30 seconds, then remove and place them on a parchment-lined baking sheet.
  2. Sprinkle with coarse sea salt and bake for about 12-15 minutes or until golden brown.
